Happy new month people, how una dey? Today am sharing with you recipe on the preparation of native soup or offor soup as some may call it, this dish is a Rivers delicacy. I prepared mine with fresh fish and assorted garnished with periwinkle, the dish is easy to prepare, and fast too.

                 Oil

Offor

Assorted meat

Perewinkle

Fresh fish (spiced)

Uziza leaf

Procedure:
  1. Put a pot of water on heat (fire) allow to boil
  2. Add offor to boiling water (offor is a thickener), allow to melt for 3-4minutes
  3. Then add oil
  4. Add your assorted meat and meat stock
  5. Add salt and Seasoning cube
  6. Allow to boil for some minutes, about 3 minutes
  7. Add your well prepared and spiced fresh fish, (watch out for post on how to prepare fresh fish)
  8. Allow to simmer for 2 minutes, then add Uziza leaves
  9. Add Perewinkle and stir carefully to prevent the fish from scattering
  10. Drop after 2 minutes
Note: some people like their native soup thick others like it light. I like it either light or thick, I prepared mine light, you can make yours thicker by adding more offor.
